Vodka Creamed Leeks

Creamy, flavorful cream sauce to serve with rice, pasta, potatoes, or a meat dish.


  • 8 medium sized leeks
  • 1/2 cup vodka
  • 1 cup water
  • 1/3 cup heavy cream
  • 2 tablespoons butter
  • Salt to taste


  • Heat butter and leeks in a large skillet over medium heat. Stir occasionally until leeks are softened (6 to 8 minutes).
  • Add vodka and 1 cup water and bring to a boil. Reduce heat and cover, let simmer until very tender (20 to 25 minutes).
  • Uncover skillet and increase heat to medium-high. Cook until liquid has evaporated (2 to 4 minutes).
  • Add heavy cream and let simmer until it has thickened and the leeks are coated.
  • Season with coarse salt. Serve with rice, pasta, potatoes, or meat dish.

For gluten-free, use a potato vodka.
