Parsley Potatoes

Nice and simple cooked potato recipe. Once they are cooking in the pot, there's about 20-25 minutes to prepare something else.

5 white potatoes, peeled and cut into chunks
4 tablespoons butter, melted
1/2 cup parsley, chopped
salt to taste

Parsley Potatoes Directions

  1. Cook potatoes in salted water until tender.
  2. Drain the water and toss them with butter and parsley.
  3. Add salt to taste.
  4. Serve right away while still warm

Recipe notes

Parsley used to be a low-sal food, but has retested medium. Because so little is used per serving, the salicylate level probably remains low for the recipe.
