Roasted Potatoes & Pears

This is an unlikely combination of low-sal foods, and it makes a great substitution when you're craving high-sal sweet potatoes.

Ingredients

5 white potatoes, peeled and cut into chunks
2 pears, peeled, cored and quartered
1 tablespoon canola or sunflower oil, or butter
1 tablespoon parsley, chopped
salt to taste

Roasted Potatoes & Pears Directions

  1. Preheat the oven to 350 degrees.
  2. Place the potatoes and pears in a shallow casserole dish and drizzle oil over the top.
  3. Sprinkle with parsley and salt. Toss to coat the potatoes and pears on all sides.
  4. Roast for 15 minutes, and then flip the potatoes and pears over.
  5. Roast another 30 minutes and turn them again. If they seem dry add another ½ tablespoon of oil.
  6. Roast until the potatoes and pears are tender and golden brown.

Recipe notes

Parsley used to be a low-sal food, but has retested medium. Because so little is used per serving, the salicylate level probably remains low for the recipe.
