10 white potatoes, peeled
2 tablespoons butter
3 cloves garlic
heavy cream to taste
1 tablespoon sunflower/canola oil, tallow, or butter

Garlic Mashed Potatoes Directions

  1. Chop up garlic and place in a frying pan. Sweat garlic in a little sunflower oil, tallow, or butter until slightly soft. Set aside garlic oil/butter mixture in a small bowl so it doesn't burn.
  2. Cut potatoes into large pieces and place in a pot with enough water to cover the potatoes. Boil the potatoes until soft, about 20 minutes.
  3. Drain the water out of the pot.
  4. Using an electric hand mixer, or potato masher, mash up potatoes with butter and garlic and add enough cream to make them the desired consistency.

Recipe notes

Garlic used to be a low-sal food, but now it has tested in the very high category. Because so little is used per serving, the salicylate level probably remains low. Consider leaving it out if you're extremely sensitive.
