Vodka Creamed Leeks

8 medium sized leeks
1/2 cup vodka
1 cup water
1/3 cup heavy cream
2 tablespoons butter
salt to taste

Vodka Creamed Leeks Directions

  1. Heat butter and leeks in a large skillet over medium heat.Stir occasionally until leeks are softened (6 to 8 minutes).
  2. Add vodka and 1 cup water and bring to a boil.Reduce heat and cover, let simmer until very tender (20 to 25 minutes).
  3. Uncover skillet and increase heat to medium-high.Cook until liquid has evaporated (2 to 4 minutes).
  4. Add heavy cream and let simmer until it has thickened and the leeks are coated.
  5. Season with coarse salt.
