Chaffles - Low-salicylate cheesy keto wafffles

These cheesy waffles are so easy to make and cook up super quick. They only require two ingredients: cheese and eggs.

1 cup Mozzarella or white cheese
3 eggs

  1. Mix eggs and cheese together in a bowl until well combined.
  2. Depending on your waffle maker size, spread egg mixture out onto the grill. My waffle maker will make two waffles - not quite filled out to the edges.
  3. Cook until golden brown - about 3-4 minutes.
  4. Top with butter or other keto and low-salicylate toppings.

Recipe notes

Use a low-salicylate white cheese. Mozzarella cheese provides a very mellow flavor so that you can top the waffle with sweet-tasting toppings like whipped heavy cream or a nut/soy butter. Mozzarella, while it still contains negligible amounts of salicylates, has tested slightly higher than other white cheeses.

I've also used sharp white cheddar which is great if serving with bacon or ham, and Monterrey jack cheese comes out super cheesy with a milk flavor as well.

I used a small Belgian waffle for these, but you can certainly buy those cute little mini waffle makers too.

I like how quickly these come out, it's often faster to make than cooking eggs on the stove - especially if you pre-grate the cheese (or ask your spouse nicely to do it) and leave it ready to go in a container.
