Cream of Red Cabbage Soup

Brightly colored delicious and hardy soup!

1/2 head red cabbage, chopped
1 stalk leek, washed and sliced
2 shallots chopped (or 1/2 onion)
3 cup chicken broth, homemade or water
3 cups milk, hot
1 tablespoon butter
1 clove garlic
salt to taste


4 slices bacon, ham or pork belly
1 cup white bean (soy, navy, white)
1 cup tofu
2 tablespoons heavy cream or sour cream

Cream of Red Cabbage Soup Directions

  1. Put all ingredients in a large pot, cover, and let cook on medium heat for about 30 minutes or so until ready to eat.

Purple/Red cabbage has tested just slightly higher than green cabbage, but is still considered low by many.


  • Add a clean bacon, pork belly, or ham for a smoky and full flavor.
  • If you want to make it hardier for a vegetarian option, add beans or tofu to add more protein.
  • Garnish with a dollop of cream or sour cream for a nice white streak. Top with green onions.
