2 cups flour
4 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 eggs, beaten
2 tablespoons butter, melted
3 ripe bananas, mashed

Banana Pancakes Directions

  1. Combine flour, baking powder, salt, and sugar together.
  2. In a separate bowl, mix milk, melted butter and eggs together.
  3. Gently mix the wet ingredients into the dry ingredients.
  4. Fold in the mashed bananas just before frying.
  5. Cook on a hot griddle or frying pan until golden brown on both sides.

Recipe notes

Bananas tend to test negligible, but when retested with free and bound salicylates, they have tested in the medium category (Malakar et al. 2017). Choose very ripe bananas, as ripening reduces salicylate levels. Reactions to this fruit seems to vary widely with people - while most people are able to tolerate it well.
