Simple Granola

Crispy and delicious granola to top any yogurt, throw into your purse, or eat as a cereal.

Ingredients

2 cups plain dry oatmeal
1/2 cup wheat germ
1/2 cup safe nut (optional) cashew, pecan, hazelnut
1/4 cup sunflower/canola oil
1/4 cup maple syrup
sprinkle sugar

Simple Granola Directions

  1. Mix all this together and then spread it out on a cookie sheet and bake at
    250 degrees F.
  2. Stir every 20 minutes to prevent burning.
  3. Cook slowly until crispy but not burned. It may take 1-2 hours, just keep a close eye on it.

Recipe notes

Cashews used to be low, but have retested higher.

Pecans and hazelnuts tested low (Swain 1985) but have never been retested. I personally can handle pecans and hazelnuts in small amounts, but have a hard time with cashews. If sunflower seeds are tolerated in small amounts, this might be another option.

Other crunchy options include roasted chickpeas (negligible), roasted soy nuts(negligible), and roasted edamame (low).
