WowButter Cookie Dough Fat Bombs

Doing keto and low-salicylate can be challenging. If you're lucky enough to handle sugar substitutes, these make a delightful snack. Gluten and nut free. For soft and gooey ingredients like this, I prefer to weigh out the ingredients using a food scale, rather than making the measuring cups all dirty.

Fat Bombs

4 oz WowButter
4 oz Salted butter
8 oz Philiadelphia cream cheese, original
3 oz Lily's dark chocolate baking chips, 55% Cacao
1/4 teaspoon salt

WowButter Cookie Dough Fat Bombs Directions

  1. Mix room temperature Wowbutter, butter, and cream cheese together. Using a mixer is easiest!
  2. In a separate bowl, mix together erythritol, chocolate chips, and salt.
  3. Add to butter mix and blend well
  4. Form into small balls, or use silicone trays to mold.
  5. Freeze for 1 hour. Pop out of trays and store in freezer.
  6. I'll pull out 2-5 cubes and leave them in my fridge to snack on over a few days, while keeping the rest in long-term storage in the freezer.

Recipe notes

The nicest thing about this recipe is using Wowbutter instead of a nut butter like peanut, cashew, or sunflower. I find that the nut butters run a little too high in salicylates for me to tolerate. Wowbutter is derived from soy.

You can use any sweetener you'd like. Erythritol is derived from Birch or Corn (both sources contain salicylates) but it is thought to be pure enough to not have any salicylates. It is a sugar alcohol, so it can draw water into your intestines and may contribute to bloating. I may try something different than erythritol in the future, as it leaves a granulated texture when chewing. It's not bad - but noticeable.

Stevia is in the chocolate chips. It is a natural sweetener from a plant. Same thing, it's supposed to be refined enough that there shouldn't be any remaining salicylate. It is more likely that there's a reaction for those who are allergic to Asteraceae/Ragweed pollens to also react to stevia products. I personally have no reaction to stevia.

And last, vanilla in the chocolate chips are controversial. I try to stay away from them whenever possible. But for one serving, I only have a few chocolate chips, so it's not a huge amount.

Another substitute for the chocolate chips would be using cocoa nibs, or taking a dark chocolate bar with ingredients you can eat, and chopping them up into smaller bits.
