Ingredients

2 eggs, lightly beaten
4 cups chicken broth, homemade

Optional

1 tablespoons parsley chopped or green onions, chopped

Egg Drop Soup Directions

  1. Bring chicken broth to a boil.

    Slowly pour the beaten eggs into the hot broth (keep the broth in motion so that it cooks in threads).
  2. Serve immediately. Sprinkle each serving with garnish.

Recipe notes

This recipe is from SalicylateSensitivity.com, 2009.

Parsley used to be very low salicylates for quite a while, but it has tested higher in 2017. A little bit should be ok, but green onions/scallions are a nice lower alternative.
