Parsley Potatoes

Nice and simple cooked potato recipe. Once they are cooking in the pot, there are about 20-25 minutes to prepare something else.

Ingredients

  • 5 white potatoes, peeled and cut into chunks
  • 4 tablespoons butter, melted
  • 1/2 cup parsley, chopped
  • salt to taste

Directions

  • Cook potatoes in salted water until tender.
  • Drain the water and toss them with butter and parsley.
  • Add salt to taste.
  • Serve right away while still warm

Additional Notes

Parsley used to be a low-sal food, but has retested medium. Because so little is used per serving, the salicylate level probably remains low for the recipe.
