Maple Pound Cake

Make a traditional pound cake, which is normally low in salicylates containing only sugar, eggs, butter, and flour.

Ingredients

Pound Cake

  • 11 oz butter, room temperature, salted
  • 11 oz white sugar, granulated
  • 11 oz eggs, room temperature
  • 11 oz white all-purpose flour (I use unfortified, unbleached)
  • 2 oz maple syrup

Maple Glaze

  • 1 cup powder sugar, sifted is best
  • 4 Tbsp. maple syrup
  • 1 Tbsp. half & half or heavy cream

Directions

  • Preheat oven to 350 degrees F, line 9" loaf pan with parchment paper
  • Start with room temperature ingredients, sift flour, crack open eggs, and measure all ingredients so they all weigh the same.
  • Blend butter in mixer on medium or high for 2 minutes
  • Add sugar and blend for 4-5 minutes on medium-high setting - you're adding bubbles and air to batter
  • SLOWLY add eggs. It should take 3-5 minutes to blend them into the mix. You're creating an emulsion in this process.
  • Add maple syrup (optional).
  • Remove from blender and fold in flour. You want the flour to become wet, the dough should be sticky, but you don't want to blend or over-mix.
  • Pour into parchment lined baking pan, put in oven for 50-70 minutes.
  • Cake is done when cake has a moist crumb (don't pull out when knife is squeaky clean). Once parchment is cool enough to handle (10 minutes or so) remove from loaf pan and cool on a wire rack.
  • Cool for about 20 minutes total, then add maple glaze.

Maple Glaze

  • Mix powdered sugar, syrup, and dairy together with a whisk until the mixture is smooth and slightly drippy.
  • Pour over top of warm cake.

Additional Notes

Storage and serving: Wrap pound cake tightly in plastic, or keep in an airtight container. I find that over time it gets drier. After the third or fourth day, I'll warm it up in the microwave and eat it with a little warmed butter.

Serve with fresh or cooked pears and some decaf coffee (if you an tolerate it). It is also delicious with milk.
