Simple quick soup - serve alone or as a base for other veggies or noodles.

Ingredients

  • 2 eggs, lightly beaten
  • 4 cups chicken broth, homemade
  • 1 tablespoons parsley chopped or green onions, chopped (optional)

Directions

  • Bring chicken broth to a boil.
  • Slowly pour the beaten eggs into the hot broth (keep the broth in motion so that it cooks in threads).
  • Serve immediately. Sprinkle each serving with garnish.

Additional Notes

This recipe was from SalicylateSensitivity.com, 2009.

Parsley used to be very low salicylates for quite a while, but it has tested higher in 2017. A little bit should be ok, but green onions/scallions are a nice lower alternative.
