Cream of Red Cabbage Soup

Brightly colored delicious and hardy soup!


  • 1/2 head red cabbage, chopped
  • 1 stalk leek, washed and sliced
  • 2 shallots chopped (or 1/2 onion)
  • 3 cup chicken broth, homemade or water
  • 3 cups milk, hot
  • 1 tablespoon butter
  • 1 clove garlic (optional)
  • salt to taste


  • 4 slices bacon, ham or pork belly
  • 1 cup white bean (soy, navy, white)
  • 1 cup tofu
  • 2 tablespoons heavy cream or sour cream


Put all ingredients in a large pot, cover, and let cook on medium heat for about 30 minutes or so until ready to eat.

Additional Notes

  • Garnish with a dollop of cream or sour cream for a nice white streak. Top with green onions.
  • I prefer to add the milk toward the end, so it doesn't scald.
  • For a keto version, omit milk and substitute with heavy cream (just a smaller portion, 1 cup). Add more broth to thin.
  • Add a clean bacon, pork belly, or ham for a smoky and full flavor.
  • For a vegetarian option, use water instead of the broth.
  • For a vegan/dairy-free option, use water instead of broth and a milk substitute, like oat, rice, or soy milk.
  • If you want to make it hardier for a vegetarian option, add beans or tofu to add more protein.
