Chocolate Pudding

Delicious and rich pudding! We've used this for a banana cream pie filling too. Top with whipped cream if you want to get fancy!

Ingredients

  • 1/2 cup white sugar
  • 1/3 cup cocoa powder
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 2 1/2 cups milk
  • 1 1/2 teaspoons vanilla (optional)

Directions

  • Mix sugar, cocoa, cornstarch and salt; gradually blend in milk. Bring to boil over medium/high heat until mixture thickens. Cook two to three minutes more; add vanilla.
  • For vanilla pudding decrease sugar to 1/3 cup and delete cocoa.
  • Let cool in fridge for 1-2 hours (yes, it will be hard to do)!

Additional Notes

Vanilla is high in salicylates, but generally well tolerated in small amounts. The pudding still tastes great without it.
