Excellent fat, that smells delicious! I have other cocoa butters, one I purchased for cosmetic use, and the other is solid in a jar. I really dislike scraping it out, or continually reheating to get what I want out. This is a food-grade cocoa butter, in large chips. Two chips weigh about 5g (1/2 Tbsp). I'll melt two in my coffee, whisk it with a tiny coffee hand blender, and then add cream or cacao powder. This is a great option for a dairy-free keto bulletproof option.
Also, cocoa butter is great for the skin. However, I don't like using it on my face or in lipsticks because it just makes me hungry smelling the chocolate all the time.
After harvesting, the fresh beans are removed from the cocoa fruit. The beans are then fermented and then dried, cleaned, pre-roasted at low temperatures, broken, and cleaned again. The broken beans are cooled, and ground resulting in the cocoa mass or liquor. The mass is then pressed causing the cocoa butter to separate out. The butter is then packaged and cooled.
