Buckwheat has tested all over the place, but many people still classify it as low, including RPAH. Swain and Malakar tested buckwheat flour as low, but Malakar's bound salicylate test classified it as high - so it has the potential to cause a reaction. Kasha has tested highest - but that includes the hulls.
This is a nice little noodle to add to soups and stir fries.
