Bamboo shoots are a nice vegetable to add to soups and stir-fries. They are very nutritious, packed with lots of nutrients like thiamine, niacin, vitamin A, vitamin B6, potassium, and vitamin E. They are high in fiber and protein, including 17 amino acids. Bamboo shoots are low in carbohydrates and fat.

Swain et al. tested canned bamboo shoots in 1985 with a 0mg/kg salicylate level.
